Hangiri sushi rice tub 60cm
Hangiri, also known as handai, is a round, flat-bottomed wooden rice tub with a centuries-old history in Japanese cuisine, used in the last step of making sushi rice. After boiling, the rice is transferred to the hangiri. Here they add a seasoning of rice vinegar, sugar and salt. After that, the rice is thoroughly mixed, covered with a cloth and allowed to cool. During the cooling process, the wood absorbs excess moisture, vinegar and pungent odors. This creates a beautiful, crumbly and aromatic rice. Hangiri diameter can range from 30 cm (for home use) to 1 meter (for restaurants).
